Slow Food Tivoli and Aniene Valley

 

The Archeo-Market is organized by the Slow Food Convivium of Tivoli and Aniene Valley, serving as a focal point for the community of producers in commercial endeavors. In partnership with the Municipality of Tivoli, its aim is to promote the excellent local cuisine by means of a narrative related to the city’s ancient cultural heritage. The entire project is designed with environmental and landscape preservation in mind, from the wooden and cotton canvas exhibition stands to the packaging materials and tastings, all of which are free from plastic.

 

The market features a diverse array of producers primarily from the Aniene Valley, offering a rich selection of local gastronomic and agricultural treasures. Among these are the Arsoli Fagiolina Bean and the Palestrina Giglietto Biscuit, both recognized as Slow Food Presidia. Additionally, visitors can explore various products from the Arca del Gusto, such as the Mentana Ciambella a Cancello, the Tivoli Pizzutello grape, the San Michele Tozzotto Bread, and the Zagarolo Sarzefine White Salsify (a root vegetable reminiscent of the black salsify).

 

The Presidia are Slow Food communities dedicated to the ongoing preservation of native breeds, varieties of vegetables and fruits, artisanal breads, cheeses, cured meats, traditional desserts, and so on. Their mission extends to safeguarding time-honored production methods and artisanal skills, while also championing environmental stewardship and fostering diverse landscapes, regions, and cultural heritages. With approximately 600 Presidia worldwide, they unite farmers, artisans, shepherds, fishermen, and winemakers from 70 countries.
